Every thanksgiving in college, I would drive to Texas to my grandmother’s house as soon as my classes were over. I would end up spending an extra four days with my grandmother visiting and helping her prepare for Thanksgiving before any of my other relatives were able to arrive. It was wonderful to have those extra quiet moments with her to myself. One task we always completed together was preparing the stuffing.
I was trying hard to find a stuffing that would delight both my vegetarian and omnivore friends for this year’s feast. My grandmother’s recipe (and her grandmother’s before then) was sitting in the back of my mind, but I did not want to do something so traditional that it made me long for my family with each bite. I took a gamble on this Apple Stuffing and prayed it would turn out all right. The verdict? They all loved it.
