Shrimp & Shiitake Dumplings with Sautéed Bok Choy & Soy Dipping Sauce

K: 6 out of 5 stars. Yes, you read right. 6 out of 5 stars. This has been my favorite meal our of all the Blue Apron meals so far. It was filling, each bite was full of flavor and easy to eat, and after finishing I could still taste the flavors. It was also one of the easiest to make. Prepping and dishes were minimal and I would deem this on the easy level of meal creation. I would love to make this for guests in the future. Perfect Proportions.

Ricotta & Beet Grilled Cheese Sandwiches with Persimmon  & Marinated Fennel Salad

K: 5 out of 5 stars.  Philip made this dish. I loved it but it was not one of P’s favorites. He thought there were too many dishes and that the salad lacked flavor. I disagreed. There were no more dishes than normal (I’m not counting him getting a new pan twice for burning butter), and the salad had lovely soft flavors. Vegetarian and filling. Perfect proportions.

White Bean & Vegetable Minestrone with Fried Rosemary

K: 4 out of 5 stars. This  is one of the first vegetarian soup dishes P and I have tried, and it was pretty good. A dish like this with chunks of chicken would be wonderful for a cold rainy day, or a day when one if sick. I am going to keep the recipe in my recipe book for future use. Lots of leftovers (but be careful, they only hold up for 1 day).
