Blue Apron Meals

We wanted to try something different this week with Blue Apron, so instead of getting three omnivore meals, we opted for three vegetarian meals. We were pleasantly surprised and are excited to venture into more vegetarian meals in the future.

Spicy Butternut Squash Empanadas with Green Tomato Salsa & Lime Crema

K: 5 out of 5 stars. These we so easy to make! They were delicious and fulfilling. I also did not feel hungry hours later. There was a ton of extra filling which the recipe warned you about, so I repurposed the extras over the next couple of days. I served it cold in the morning with yogurt (delicious), as a filling for an omelette (superb), and as part of an egg scramble (magnificent!).

P: 5 out of 5.  The filling was my favorite part. The crema was my 2nd favorite. The empanada needs to be eaten immediately- three days later it is soggy.

Cauliflower Steaks & Farro Salad with Grape & Brown Butter Sauce

K: 4 out of 5 stars. Philip made this dish. I am not quite sure how much he followed the recipe to the T, but I will take his word that he did his best. The Cauliflower steaks were so good!!! It was crunchy and tender at the same time. Roasting them with salt, pepper, and olive oil is the only way to go! The sauce offered sweetness to the dish, but I felt like the faro salad was far too bland. Extra salad.

P: 5 out of 5 stars. The amount of Faro salas left over was substantial and kept really well. It was very easy to make. Prepping and cooking the cauliflower was simple but tasted delicious. We enjoyed it so much, we repeated the process for Cauliflower steaks literally the next day for our vegan friends. The only downside was the raw rosemary as a garnish.

Baked Whole Wheat Rigatoni with Cone Cabbage & Sage

K: 4 out of 5 stars. This was satisfying, but super complicated to make. At one point I was watching three pans at once. This dish is creamy and starchy,  but also filling. I did wish there was more seasoning of some kind and more vegetables besides just cabbage. More leftovers! Over 1/2 the baking dish was left over! Still delicious three days later.

P: 5 out of 5 stars. We started eating it before we took a photo. Normally I do not enjoy wheat pasta, but the combination of ingredients worked so well together I did not mind it. This was my favorite of all the vegetarian meals.
